Yes Brenda, there is a nut recipe.

My  friend Brenda asked if I might be sharing the nut recipe from the previous post.  Thank you for asking Brenda.....I intended too.   OOOPS.   I had to go to the post and see if I had actually done something so stupid as forgetting to upload the recipe.  And YES, I DID FORGET, so thank you Brenda for so kindly and tactfully pointing that out in such a gracious manner.  I am claiming that the holidays are catching up to me.  So here it is, hopefully in time for any of you who might wish to whip some up for the holidays; and I absolutely recommend that you do whip some up........now that you actually have the recipe.   Thanks for bearing with my shortcomings. 
Candied Roasted Nuts

½ cup of water
1 cup of granulated sugar
¼ teaspoon of pure vanilla extract
¼ tsp of kosher salt
2 cups of peanuts (see * below)

Preheat the oven to 325ยบ F.

Line a baking sheet pan with parchment paper or a Silpat silicone sheet. This will prevent the nuts from sticking to the pan as they cool.  Don't skip this step or believe me you will be sorry.  Set the prepared pan aside.

In a 2 quart saucepan, combine all of the ingredients. Stir constantly over medium heat until the sugar syrup starts to granulate (this will take a while, don't give up). When it does, immediately pour the sugared nuts onto the baking sheet. If you don’t get the nuts out of the pan right away they will harden onto the pan and you will have to soak them in water to remove from the pan. Spread them evenly on the pan in a single layer.

Bake the nuts for 20 minutes to dry them out. They will begin turn a bit darker.

* If you use salted nuts you probably won’t need to add salt, but if you used raw unsalted Spanish peanuts, you may want to salt them as they cool. Spray the hot nuts with a bit of water and sprinkle kosher salt on them, toss, and let dry.

Let them completely cool and package.

  1. Ah, I wondered what had happened to the recipe! That stuff happens to me all the time -- it's like sending an email and forgetting the attachment LOL.

    They look wonderful. Would those ingredients work on almonds too?

  2. My husband would love these so I think I'll make some for his stocking:) Do you think it would work just as well with almonds or pecans(both of which I already have)?

    This recipe will work with any nut you enjoy. Just be sure to read the note at the bottom of the recipe about using salted or unsalted nuts to begin with. Hope you enjoy them. We sure did.
