Chicken Marengo...hmm, "What's that?", you ask. (Play along with me, here). Well, Melissa D'Arabian of The Next Food Network Star says it's a "$10.00 Dinner". The recipe is here. It used all the ingredients that I have in my fridge and freezer so I call it, "Tonight's Dinner".
I needed to use these ingredients before they go bad because - 1. I keep buying that colorful mega-gigantic bag of mini sweet peppers, that I just can't resist at Costco and 2. I keep forgetting that only half of my family still lives at home and I'm still shopping and cooking for all of them. I did make some changes to her recipe. It called for 1 yellow bell pepper, but I had the afore-mentioned gigantic bag of peppers so I added a lot more (my family loves them anyway) and used red, yellow, and orange ones.
I prepped.
I browned.
I sauteed.
I finished.
I also added 3 cloves of chopped garlic with the vegetables and a tablespoon of balsamic vinegar at the end. The vegetables were a bit bland as the recipe was written and they needed a more acid. The sweetness of the peppers was enhanced with a splash of vinegar at the finish. Yes, it was just that easy. All in all, this was a hit. I will definitely make it again. Steamed yellow baby potatoes with chive butter were just the right accompaniment. The best thing about cooking for twice as many as you have living with you ...
there is plenty left over for tomorrow.
Oh, can I relate to the cooking for more than you have around your table comment. I've got to start to rethink all my recipes and shopping habits.
