Bonnie's Raspberry Sauce
(adapted from Serendipity Sundaes)
Ingredients:
3 cups of raspberries, fresh or frozen
1/2 cup of granulated sugar
1/2 cup of light brown sugar
4 tablespoons of unsalted butter
1 tablespoon of light corn syrup
1/2 teaspoon of freshly squeezed lemon juice
Mash the raspberries well. If using frozen, do not drain the juice.
Put all the ingredients except the lemon juice into a heavy saucepan and bring to a simmer. Cook, stirring occasionally, until the syrup is thickened. Remove from the heat and strain through a fine mesh sieve to remove seeds. Add the lemon juice and combine. If desired, return to the saucepan and cook down further to desired consistency.
Makes about 2 1/2 cups of syrup.

Mmmmm! That would definitely be a treat to enjoy in the middle of winter..at least where you live. The weather doesn't deviate much in the winter here:) You are getting a lot of mileage out of your raspberries! Lucky!
