Southern Living Cobbler

We had friends for dinner on the December 23rd.  The turkey and potatoes and blood orange dressing on the green salad was amazing.  Then I ran out of time for dessert making.  Luckily,  this apple cobbler can be turned out pretty quickly.  Most ingredients are already in the pantry.  It's cake-y, and butter-y, and slightly sweet and tart at the same time.  Serve it warm with a premium vanilla ice cream.
The original recipe came from Southern Living magazine via my Sister Diane.  It calls for fresh peaches but  apples are in season (and were in my refrigerator).  It was a great substitute.

You can't go wrong serving this one.  Even to company.  After tasting the first bite, the reactions were,
"Wow, wow, wow"!

I doubled the recipe and cooked it in my large dutch oven, thinking to have a few leftovers but
one serving was all that was left when everyone was finished.  It is just that good..
Unpretentious but delicious.  I used the recipe below but substituted the apples straight across for the peaches.  I did sautee the apples down a bit before assembling as they are not nearly as soft as the peaches.

Fresh Peach Cobbler

recipe adapted from Southern Living, June 1997

1/2 cup unsalted butter
1 cup all-purpose flour
1 1/2 cups sugar, divided into 3/4 cup each
1 tbsp. baking powder
1/4 tsp. kosher salt
1 cup milk
4 cups (about 4 large) fresh yellow peaches, cut into slices
1 tbsp. fresh lemon juice
1/4 tsp. lemon zest
1/4 tsp. cinnamon
1/8 tsp. nutmeg

Directions:
Preheat oven to 375 degrees.

Melt butter in a large baking dish or dutch oven.
Combine flour, 3/4 cup sugar, baking powder and kosher salt in a medium bowl. Add milk and stir just until dry ingredients are incorporated. Without stirring, pour batter over melted butter.

Heat remaining 3/4 cup sugar, fresh peach slices, lemon juice, lemon zest, cinnamon and nutmeg over medium-high heat, stirring constantly. Cook until sugar has melted and all ingredients are fully mixed. Without stirring, pour the peach mixture over the batter. Don’t worry: the crust will form over the peaches during baking. Sprinkle cobbler crust with additional cinnamon or nutmeg, if desired.

Bake cobbler for 40-45 minutes or until golden brown. Serve cobbler along with Homemade Vanilla Ice Cream, if desired.
