Seren-Dipity Do Dah!

Two of my daughters spent a week last month with a friend who lives in Manhattan.  Knowing I love cookbooks, they brought me a recipe book from their favorite ice cream parlor.  I've never been there but my girls go each time they're in New York City.  Maybe you've heard of it...Serendipity.

Let's adapt a recipe for raspberry sauce.  I was inspired by a sundae recipe from this book.
Bonnie's Raspberry Sauce
(adapted from Serendipity Sundaes)

Ingredients:
3 cups of raspberries, fresh or frozen
1/2 cup of granulated sugar
1/2 cup of light brown sugar
4 tablespoons of unsalted butter
1 tablespoon of light corn syrup
1/2 teaspoon of freshly squeezed lemon juice

Mash the raspberries well.  If using frozen, do not drain the juice. 
 
Put all the ingredients except the lemon juice into a heavy saucepan and bring to a simmer.  Cook, stirring occasionally, until the syrup is thickened.  Remove from the heat and strain through a fine mesh sieve to remove seeds.  Add the lemon juice and combine.  If desired, return to the saucepan and cook down further to desired consistency.

Makes about 2 1/2 cups of syrup.

I loved the bright taste of this ice cream topping.  The splash of lemon at the end makes the flavor pop.  I may have to make some extra and water bath can it in small gift jars.  Goodness knows I have enough raspberries in my patch.  It would be nice to have some of this topping in the dead of winter.   Hmmm.....maybe for Christmas gifts.  It's a thought!!!

  1. Mmmmm! That would definitely be a treat to enjoy in the middle of winter..at least where you live. The weather doesn't deviate much in the winter here:) You are getting a lot of mileage out of your raspberries! Lucky!

  8. I think I'd love a scoop with the hot fudge and a scoop with the raspberry. I love the mix at the bottom of the dish. All that melty ice cream and toppings mixed together!

  15. Whoa! So super excited for this recipe because due to the storms here, after such a dry time, most of my wild raspberries are pretty battered by the elements!
