Fresh Berries with Lemon Cream



Mmmm...Succulent berries and lemon cream.  What could be better.  This time of year when the berries are starting to come into the markets (and even better into my garden in just a short while) I can't resist making this beautiful recipe.  I'ts not too heavy after a nice meal (I didn't say it was Low - Calorie; it has cream, after all).  It's is a star in it's own right.  Try it when you find those perfect berries and want to keep it simple.  All of the components can be made ahead of time and assembled just before serving.

Start out by washing the berries and tossing them with granulated sugar.  Set them aside to macerate.

Combine the 1/2 C. sugar, lemon juice, and zest in a small saucepan.  Stir the sugar over medium heat until dissoved.  Bring the mixture to a boil, then turn heat down and simmer for about 10 minutes without stirring.
Set this aside until it's cool.  (We just made a simple syrup with lemon juice instead of water).
Whip cream until stiff; fold in the lemon syrup, being careful not to deflate the cream. 
Arrange the berries in a beautiful container and spoon the cream over.

Garnish, serve and bask in the compliments.

Recipe:

1 pt. fresh berries (I used strawberries, blueberries, and blackberries) but you can use whatever looks best
1 Tab. granulated sugar
2 tsp. lemon zest
1/2 C. granulated sugar
1/2 C. fresh lemon juice
1 C. heavy whipping cream

Toss the berries in the 1 Tab. sugar.  Make a simple syrup with the next 3 ingredients.  Whip the cream until stiff and fold the syrup in.   Serve.
